Medifast Recipes

 

Recipes from the TSFL Cookbook, some of which I have tweaked to my liking.


 

 

Pina Colada

1 packet Medifast French Vanilla Shake
2 T sugar free pineapple syrup
1 T sugar free coconut syrup
1/2 C seltzer or sugar free flavored water
1/2 C ice
Pour ingredients into bullet blender and mix until smooth.


 

Coconut Milkshake

1 packet Medifast French Vanilla Shake or Dutch Chocolate Shake
2 T sugar free coconut syrup
1/2 C  water
1/2 C ice
Pour ingredients into bullet blender and mix until smooth.


 

 

Tiramisu Milkshake

1 packet Medifast Cappuccino
2 T sugar free chocolate syrup
1/2 C  water
1/2 C ice
Pour ingredients into bullet blender and mix until smooth.




Mudslide Milkshake

1 packet Medifast Dutch Chocolate Shake
1 T sugar free chocolate syrup
1 T sugar free coffee syrup
1 T sugar free Irish cream syrup
1/2 C  water
1/2 C ice
Pour ingredients into bullet blender and mix until smooth.


 

 

Root Beer Float

1 packet Medifast French Vanilla Shake
1/2 C  diet root beer
1/2 C ice
Pour ingredients into bullet blender and mix until smooth.


 

 

Banana Float

1 packet Medifast Banana Creme Shake
1/2 C  diet cream soda
1/2 C ice
Pour ingredients into bullet blender and mix until smooth.


 

 

Tropical Cooler

1 packet Medifast Orange Crème Shake
1 T sugar free pineapple syrup
1 T sugar free coconut syrup
1 T sugar free banana syrup
1/2 C  water
1/2 C ice
Pour ingredients into bullet blender and mix until smooth.


 

 

Chocolate Cherry Smoothie

1 packet Medifast Dutch Chocolate Shake
2 T sugar free cherry syrup
1/2 C water
1/2 C ice
Pour ingredients into bullet blender and mix until smooth.


 

 

Broccoli Quiche

1 packet Medifast cream of broccoli soup
3 egg whites
1/4 t baking powder
1/2 C steamed broccoli
Combine egg whites, soup, and baking powder in mixing bowl and beat well. Divide steamed broccoli evenly into 3 muffin cups. Pour batter over broccoli. Bake at 400 degrees for 15 minutes.


 

Blueberry Pancakes

1 packet Medifast Eggs
8 oz water
2 packages Medifast blueberry oatmeal  
1/4 t baking powder
1/8 t vanilla
Cooking spray
Whisk together eggs and water. Add baking powder and vanilla. Stir in Medifast Oatmeal, one at a time. Spray skillet with cooking spray. Pour mixture into pan and cook like pancakes.  Serve pancakes with sugar free syrup. Yields 6 pancakes = to 3 servings. Reheat leftovers in microwave for 15 seconds.


 

 

Mediterranean Chicken

2 T olive oil

3 T vinegar
1 t Italian seasoning
1 clove minced garlic
1/4 t ground black pepper
1 T shopped sundried tomatoes
2 7oz boneless, skinless chicken breasts
3/4 C sliced summer squash
3/4 C sliced zucchini
Salt & pepper
Combine all ingredients in a large ziplock bag and shake well. Refrigerate for at least 30 min. grill chicken until done and grill veggies in foil until cooked.


 

 

Chicken Teriyaki

2 T olive oil
4 T low sodium soy sauce
1/2 C chopped onion
2 cloves minced garlic
1/2 t minced ginger
2 6oz boneless, skinless chicken breasts
Combine all ingredients and marinate chicken overnight in refrigerator. Grill until done. Serve with steamed or grilled veggies of your choice from the Green list.

 


 

Balsamic Chicken

2 cloves chopped garlic
4 T Italian spices
4 T olive oil
1/4 C balsamic vinegar
4 7oz boneless, skinless chicken breasts
Combine all ingredients and marinate chicken overnight in refrigerator. Preheat oven to 350 degrees. Place chicken and marinate in shallow baking pan. Roast for 45 minutes or until cooked thoroughly. Serve with steamed or grilled veggies of your choice from the Green list.


 

 

Grilled Pork Chops

4 5oz boneless pork center loin chops
1 t salt
1/2 t ground black pepper
1/2 t garlic powder
1 t sage
1 t paprika
Combine seasonings and coat chops. Grill over medium heat until done. Serve with steamed or grilled veggies of your choice from the Green list.


 

 

Shrimp Kabobs

2 T low fat Italian dressing
7 oz shrimp
1/4 C bell peppers, cubed
1/2 C red onion, cubed
1/2 C mushrooms
Old Bay
Marinate shrimp in Italian Dressing for at least 30 minutes. Alternate shrimp and veggies on bamboo skewer. Sprinkle the kabobs lightly with Old Bay seasoning. Grill kabobs until done.


 

Grilled Halibut

1 T fresh lemon juice
2 t olive oil
1 t chopped capers (if desired)
1 t chopped onions or shallots
Cooking spray
7 oz halibut filet
Salt & pepper
Combine all ingredients in bowl and set aside. Spray pan with cooking spray. Sprinkle fish with salt and pepper and cook in pan until done. Spoon mixture onto cooked fish and serve with steamed or grilled veggies of your choice from the Green list.
